  • 1 lb Italian sausage (mild or hot, pork or chicken)
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3-4 carrots, peeled and chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 1/2 tablespoons Italian seasoning
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon salt
  • 29 oz canned diced tomatoes
  • 5 cups chicken stock (+1-2 more cups for the slow cooker)
