Ingredients

Step One Ingredients (for Ham Hock)

  • 1 Tablespoon Olive Oil
  • 1 large Onion, chopped
  • 1 teaspoon Johnny’s Seasoned Salt (or substitute, see above)
  • ¼-½ teaspoon Crushed Red Pepper Flakes (adjust to taste)
  • 1-2 teaspoons Creole Seasoning (optional, adds extra depth)
  • 4 Garlic Cloves, minced (optional, but highly recommended)
  • 32 oz Chicken Broth, low sodium (or vegetable broth for vegetarian)
  • 1 Ham Hock (about 1 to 1 ½ lbs, or substitute meat)

Step Two Ingredients (for Collard Greens)

  • 1 lb Collard Greens, washed, chopped (or 1 or 2 10-oz bags of pre-washed & chopped)

Instructions

Step One – Cook the Ham Hock

  1. Set the Instant Pot to the Sauté setting (Normal/Med heat). When the display reads “Hot,” add the olive oil.
  2. Add the chopped onion and cook, stirring occasionally, until it becomes tender and translucent, about 5-7 minutes.
  3. Stir in the seasoned salt, crushed red pepper flakes, and Creole seasoning (if using). Cook for another minute, stirring to combine.
  4. Add the minced garlic and cook for about 30 seconds, stirring constantly, until it becomes fragrant. Be careful not to burn it.
  5. Pour in the chicken broth and place the ham hock into the broth. It may not be completely submerged, which is perfectly fine.
  6. Turn off the Sauté mode. Secure the lid on the pot and lock it into place. Ensure the Steam Release Knob is set to the Sealing position. Select the “Meat/Stew” button (or use the “Pressure Cook” function) and adjust the time to 35 minutes on High Pressure.
  7. Once the cooking cycle is complete, allow a Natural Pressure Release (NPR) for 10 minutes. After 10 minutes, carefully manually release any remaining steam by turning the knob to Venting until the float valve drops. Then, open the lid.
  8. Using two forks, try to gently break up the ham hock a little if possible. It will be hot and still somewhat tough, so don’t force it. Even just flipping it over or breaking it in half can help it cook more thoroughly in the next step.

Step Two – Cook the Collards

  1. Add the washed and chopped collard greens to the pot. Use a spoon or tongs to gently push them down into the flavorful liquid. They may seem like a lot at first, but they will cook down significantly.
  2. Ensure the silicone sealing ring is properly seated in the lid. Place the lid back on the pot and set the knob to Sealing.
  3. Press the “Manual” (or “Pressure Cook”) button and use the +/- buttons (or dial) to set the cooking time to 25 minutes on High Pressure.
  4. When this cooking cycle has finished, allow the pot to naturally release pressure for 10 minutes (10-minute NPR). After 10 minutes, manually release any remaining steam until the float valve drops.
  5. Open the lid and carefully remove the ham hock to a separate bowl. Use two forks to separate the tender meat from the fat and bones. Discard the fat and set aside the bones (you can even freeze them for a future batch of homemade bone broth!).
  6. Shred the ham hock meat and return it to the pot with the collard greens. Stir everything together.
  7. Taste the collard greens and adjust seasonings if necessary. That’s it! You now have a rich, tender, and incredibly tasty batch of collard greens ready to enjoy. Serve them hot, preferably with a side of cornbread to sop up every last drop of that savory pot likker!
