Embrace the Ease: Instant Pot White Chicken Chili

There’s a reason this Instant Pot White Chicken Chili consistently ranks among our favorites. It’s a versatile dish that effortlessly feeds a small crowd, making it ideal for entertaining, potlucks, or simply ensuring you have delicious leftovers throughout the week. The beauty of this recipe lies not just in its incredible flavor profile but also in its adaptability. Picture a steaming bowl, brimming with savory goodness, waiting to be adorned with a generous dollop of sour cream, slices of creamy avocado, a sprinkle of fresh cilantro, a kick of diced jalapeño, and the satisfying crunch of tortilla chips. Each spoonful offers a symphony of textures and tastes, making it a truly memorable meal.

White Chicken Chili distinguishes itself from traditional red chili by its lighter color and distinct flavor profile, largely attributed to the use of white beans and milder green chiles. While many chili recipes call for robust red sauces and kidney beans, this version offers a refreshing alternative that is equally comforting yet uniquely vibrant. The combination of succulent chicken, wholesome white beans (such as cannellini or great northern), and the subtle heat from green chiles creates a harmonious blend that appeals to a wide range of palates. It’s a wholesome meal that doesn’t compromise on taste, delivering warmth and satisfaction in every bite.

Understanding Your Ingredients: Chicken Choices

When preparing this Instant Pot White Chicken Chili, you have flexibility with your chicken choice. For optimal results and tenderness within the pressure cooker, we recommend using raw chicken breasts or thighs, cut into cubes. The Instant Pot’s high-pressure cooking method ensures the chicken cooks through perfectly, becoming incredibly tender and easy to shred or serve in chunks directly within the chili.

Can I use pre-cooked chicken in this recipe?

Absolutely! Using pre-cooked chicken is a fantastic time-saver if you’re looking to get dinner on the table even faster. If you opt for cooked chicken, such as leftover roasted chicken or a store-bought rotisserie chicken, simply add the shredded or diced meat to the chili after the pressure cooking cycle has completed. Stir it in thoroughly and allow it to heat through for a few minutes using the Instant Pot’s “Sauté” function on low, or simply let it rest in the hot chili before serving. This prevents the chicken from becoming overcooked and dry during the pressure cooking phase, maintaining its succulence and flavor.

Working with Beans: Canned vs. Dry

This recipe is specifically developed to use canned white beans, which offer convenience and consistent results. Canned beans are pre-cooked and soften quickly, integrating seamlessly into the chili’s texture. Using them allows all ingredients, including raw chicken, to cook together efficiently in the Instant Pot, creating a deeply flavored dish without extended cooking times.

What if I prefer to use dry beans?

While the current recipe isn’t designed for cooking dry beans directly with raw chicken due to the different cooking times required (dry beans take significantly longer and could lead to overcooked, dry chicken), there are ways to adapt it. If you wish to use dry white beans, we recommend one of two approaches:

  1. Pre-cook your dry beans separately: Cook your dry white beans in the Instant Pot (or on the stovetop) until tender before starting this chili recipe. Once cooked, drain and rinse them, then add them to the chili mixture at the same stage as the canned beans.
  2. Cook dry beans first, then add cooked chicken: If you’re set on cooking dry beans *in* the Instant Pot with the chili base, you would typically need to cook them for about 40 minutes under high pressure, followed by a 15-minute natural pressure release. For this method, you absolutely must use pre-cooked chicken. Add the pre-cooked chicken *after* the beans have finished cooking and the pressure has released, allowing it to warm through as described above. This ensures both your beans are tender and your chicken remains moist.

For simplicity and the best outcome with raw chicken in this specific recipe, sticking to canned, drained, and rinsed white beans is highly recommended.

Meal Prep Made Easy: Freezing and Storage

One of the many advantages of this Instant Pot White Chicken Chili is its excellent freezer-friendliness, making it a perfect candidate for meal prepping. Whether you’re cooking for one or stocking up for busy weeks, this chili holds up beautifully when frozen and reheated.

Does Instant Pot White Chicken Chili freeze well?

Yes, it freezes exceptionally well! To make meal planning a breeze, I like to freeze individual portions. A great method is to fill quart-sized freezer bags, lay them flat, and freeze them that way. This not only maximizes space in your freezer but also significantly speeds up the thawing process when you’re ready to enjoy a quick, delicious meal. Alternatively, you can use airtight freezer-safe containers for larger portions.

When you’re ready to enjoy your frozen chili, simply transfer it to the refrigerator to thaw overnight, or use the defrost setting on your microwave. Reheat gently on the stovetop over medium-low heat, stirring occasionally, or in the microwave until heated through. Add a splash of chicken broth or water if it seems too thick after thawing. The flavors remain vibrant, making it a convenient and tasty option for future meals.

Ingredients

  • 3 Tbsp Olive Oil
  • 1 Yellow Onion, chopped
  • 2 ribs Celery, diced
  • 4 Chicken Breasts raw, cubed (or 1 rotisserie chicken, deboned and shredded)
  • 4 cloves Garlic, pressed or minced
  • 1 Tbsp Cumin
  • 2 tsp Chili Powder
  • 1 tsp Oregano (Mexican Oregano, if you have it)
  • 2 tsp Coriander
  • ½ tsp Black Pepper
  • 1 tsp Kosher Salt
  • 1 (7 oz) can Diced Green Chiles (with juice)
  • 1 (14.5 oz) can Diced Tomatoes (with juice)
  • 1 ½ cups Salsa Verde
  • 3 (14.5 oz) cans White Beans,* drained and rinsed
  • 4 cups Chicken Broth** (low sodium)
  • ½ cup Cilantro, rinsed and chopped
  • 1 Tbsp Fresh Lime Juice

To Finish

  • 5 (6 inch) White Corn Tortillas, sliced in strips (helps thicken and gives good flavor)
  • 1 cup Sour Cream

Garnishes

  • Diced Jalapeño
  • Extra Sour Cream
  • Avocado
  • Crushed Tortilla Chips
  • Shredded Cheese
  • Cilantro Leaves

Instructions

  1. Turn your Instant Pot to the Sauté function. Once the display reads “Hot,” add the olive oil.
  2. Add the chopped onion and diced celery to the pot and stir. Cook until they begin to soften and become translucent, typically for 3-5 minutes.
  3. Add the cubed raw chicken breasts (or thighs) and stir. Cook, stirring occasionally, until the chicken turns white on the outside. You don’t need to cook it through completely at this stage. If you’re using pre-cooked chicken, simply add it now and proceed to the next step without further sautéing.
  4. Stir in the pressed or minced garlic, cumin, chili powder, oregano, coriander, black pepper, and kosher salt. Cook for about 1 minute until fragrant.
  5. Add the can of diced green chiles (with their juice), diced tomatoes (with their juice), salsa verde, and the drained and rinsed white beans to the pot. Stir to combine all ingredients.
  6. Pour in the chicken broth, then add the fresh cilantro and lime juice. Stir everything gently to ensure it’s well mixed.
  7. Secure the lid on your Instant Pot, locking it into position. Ensure the steam release knob is set to the Sealing position.
  8. Press the “Cancel/Keep Warm” button to turn off the Sauté function.
  9. Select the “Manual” (or “Pressure Cook”) button, then use the ‘+’ or ‘-‘ buttons to set the cooking time to 10 minutes on High Pressure.
  10. Once the cooking cycle concludes, allow the pot to naturally release pressure for at least 15 minutes. This is crucial for tenderness and flavor development.
  11. After the natural release, carefully turn the steam release knob to the “Venting” position to manually release any remaining steam/pressure. Be very cautious during this step; I often use a wooden spoon to gently tap it open, then close it a few times to ensure the contents don’t spew out of the vent.
  12. When the pressure has fully released and the float valve (pin) on the lid drops, carefully open the lid, always facing it away from your face to avoid residual steam.
  13. Stir the chili, taste, and adjust salt or other seasonings as desired.

To Finish and Serve

  1. Take the 5 white corn tortillas and slice them into thin strips. Add these strips to the chili. Stir well and let them soak up the liquid; they will soften, break apart, and impart a lovely masa corn flavor, also helping to slightly thicken the chili.
  2. Stir in the cup of sour cream until fully incorporated, adding a creamy richness to the chili.
  3. Serve your Instant Pot White Chicken Chili immediately with your favorite garnishes. We highly recommend adding a variety of toppings to enhance the experience!

Notes

  • *For a fun twist, you can replace one of the cans of white beans with black beans to create a delicious “Black and White” chili.
  • **For an even thicker chili consistency, reduce the chicken broth to 3 cups instead of 4.
