  • 4 pound boneless chuck roast
  • 1 yellow onion, chopped
  • 3 carrots, chopped
  • 1 stalk celery, chopped
  • 4 cloves garlic, smashed and peeled
  • 1 sprig fresh rosemary (or 1/2 teaspoon dry rosemary)
  • 2 sprigs fresh thyme (or 1/2 teaspoon dry thyme)
  • 1 cup red wine
  • 1/2 ounce dry porcini mushrooms, rinsed very well
  • 2 teaspoons Worcestershire sauce (ensure gluten-free)
  • 2 bay leaves
  • 1-2 cups gluten-free beef stock or broth

Optional Ingredients:

  • 2 pounds small Yukon gold potatoes, left whole
  • 1 pound carrots, cut into 2-inch pieces

Instructions

  1. Pat the beef dry with paper towels and season generously with salt and pepper.

  5. Stir in the garlic, rosemary, and thyme and cook for another 30 seconds until fragrant. Pour in the red wine, scraping up all the browned bits from the bottom of the pan to deglaze and capture all the flavor. Allow the wine to cook and reduce for 3-4 minutes.
  6. Pour the wine/vegetable mixture over the beef in the slow cooker. Add the rinsed porcini mushrooms, Worcestershire sauce, bay leaves, and 1 cup of beef broth.
  7. Cook on low for 6-8 hours or on high for 3-4 hours, until the roast is incredibly tender and easily pulls apart.
  8. IF USING OPTIONAL VEGETABLES: During the last 2 hours of cooking, add the potatoes and extra carrots to the slow cooker on top of the meat.
