- 20 Chocolate Sandwich Cookies, filling scraped out
- 1 Tbsp Sugar
- 3 Tbsp Butter, melted
Cheesecake Filling
- 2 8oz Pkgs Cream Cheese, room temperature
- ½ cup Sugar
- 2 ½ tsp Orange Zest (from about 1-2 medium oranges)
- 2 Tbsp Orange Juice (freshly squeezed for best flavor)
- 1 tsp Lemon Juice (freshly squeezed)
- 2 tsp Vanilla Extract
- ½ cup Sour Cream
- ½ cup Heavy Cream
- 2 Large Eggs, room temperature

Lightly spray the inside of your chosen pan with baking spray. For easier removal and a cleaner base, cut a circle of parchment paper to fit the bottom of the pan and place it in, then spray the parchment paper as well.

Pour 1 ½ cups of water into the inner liner of your electric pressure cooker. Place the trivet (or a steamer rack) into the pot. This creates the steam bath crucial for perfectly cooked cheesecake and keeps your pan elevated above the water.

To safely and easily lift the cheesecake in and out of the pressure cooker, create a simple sling. Tear off a piece of aluminum foil approximately 28 inches long.
