  • 2 tablespoons vegan butter or olive oil
  • 1/2 cup shallots, chopped
  • 1/2 cup cremini mushrooms, chopped
  • 2-3 cloves garlic, minced
  • 1 head cauliflower, chopped roughly into 2-inch pieces
  • 2 cups chicken stock + 1 cup for finishing the sauce
  • 1/3 cup whole raw cashews + 1/2 cup chicken stock (or 1/2 cup milk)
  • 1/2 teaspoon gluten-free soy sauce
  • 1/4 cup parmesan cheese, optional

For the Tetrazzini:

  • 2 tablespoons vegan or regular butter
  • 2 tablespoons olive oil
  • 3 medium or 2 large chicken breasts
  • 1/8 tsp salt & pepper
  • 1 medium onion, chopped
  • 8 oz cremini mushrooms, chopped
  • 3-4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, chopped
  • 1/2 cup dry white wine or chicken stock
  • 12 oz (1 1/2 boxes) gluten-free tagliatelle noodles
  • 3/4 cup frozen peas, defrosted
  • 1/4 cup Italian flat leaf parsley, finely chopped

For the Topping:

  • 1/2 cup gluten-free panko bread crumbs
  • 1/4 cup dairy-free parmesan* or regular parmesan
  • 3 tablespoons vegan or regular butter, melted

Instructions

For the Sauce:

  1. Cover the cashews, if using, in boiling water and let them sit for 15 minutes while you prep the other ingredients. This step helps soften them for a smoother blend.
  2. In a medium saucepan or Dutch oven, heat the butter or olive oil over medium-high heat. Add the shallots and mushrooms and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Add the chopped cauliflower and 2 cups of chicken stock. Bring the liquid to a boil, then reduce the heat to a simmer, cover, and cook for 10-15 minutes, or until the cauliflower is very soft and easily pierced with a fork.
  3. Drain and rinse the soaked cashews. Place them in a high-speed blender with 1/2 cup of chicken stock (or milk, if preferred). Blend until completely smooth and creamy. Once the cauliflower is cooked, carefully transfer the entire cauliflower mixture from the saucepan into the blender with the cashews. Blend on low speed until the mixture is totally smooth and homogenous. Pour the creamy sauce back into the saucepan. Stir in the gluten-free soy sauce and parmesan cheese (if using). Add the remaining 1 cup of chicken stock and stir to combine. Taste and season with more salt if needed, along with plenty of freshly cracked black pepper.

  1. Preheat your oven to 450°F (232°C). Lightly butter or grease a 13×9-inch baking dish.
  2. Heat the butter and olive oil in a large skillet over medium-high heat. Season the chicken breasts generously with salt and pepper. Add the chicken to the hot skillet and cook for 5-6 minutes per side, or until cooked through and golden brown. Transfer the cooked chicken to a plate to cool slightly, then shred it into bite-sized pieces using two forks or your hands.
  3. In the same skillet (now empty), add another tablespoon of butter or olive oil if necessary. Add the chopped onion and mushrooms. Cook, stirring occasionally, until they are very soft and caramelized, which should take about 7-9 minutes. Stir in the minced garlic and fresh thyme, cooking for just 30 seconds more until aromatic.
