Crafting a Vegetarian Delight: Adapting Your Tortellini Soup

Absolutely! This versatile soup recipe is incredibly adaptable and can easily be transformed into a delicious vegetarian dish. The process is simple: just omit the sausage entirely. To ensure a rich, savory base that doesn’t compromise on flavor, substitute the chicken broth with an equally high-quality vegetable broth. For an extra boost of nutrition and texture, consider adding more vegetables like diced zucchini, bell peppers, or even mushrooms during the initial sautéing phase. You can also enhance the umami by adding a spoonful of nutritional yeast to the broth. This ensures that even without meat, your vegetarian Instant Pot Creamy Tortellini Soup will be just as hearty and flavorful.

Exploring Meat Alternatives for Your Tortellini Soup

While classic Italian sausage lends a fantastic depth of flavor to this **Instant Pot Tortellini Soup**, you’re welcome to experiment with various other ground meats to suit your preference or what you have on hand. Each choice offers a slightly different flavor profile, allowing you to customize the soup to your liking. Here are some popular alternatives:

  • **Ground Beef:** Opt for lean ground beef (85-90% lean) to prevent the soup from becoming overly greasy. Brown it well to develop rich flavors.
  • **Ground Turkey or Chicken:** These lighter alternatives are excellent for a healthier option. They tend to be less flavorful on their own, so you might want to increase the amount of seasonings, such as Italian seasoning, garlic powder, or a pinch more red pepper flakes, to ensure the broth remains robust.
  • **Ground Turkey Sausage:** For a flavor profile similar to pork Italian sausage but with a leaner twist, ground turkey sausage is a fantastic choice. Many varieties come pre-seasoned, adding a convenient burst of savory notes to your soup.

When substituting, remember that different meats release varying amounts of fat. If using a leaner meat, you might need an extra drizzle of olive oil during sautéing. Conversely, if your chosen meat is fattier, consider draining some of the excess grease after browning to maintain the soup’s optimal texture and taste.

Step-by-Step Guide: How to Make Instant Pot Creamy Tortellini Soup

Preparing this incredibly flavorful **Instant Pot Tortellini Soup** is a straightforward process, thanks to the efficiency of your pressure cooker. Follow these detailed steps for a perfect bowl every time:

Onions in the Instant Pot, followed by carrots being added

Step 1: Sauté the Aromatics. Begin by setting your Instant Pot to the “Sauté” function on normal heat. Once the pot indicates it’s hot (usually after a few minutes), add 1½ tablespoons of olive oil. Immediately add one medium chopped yellow onion to the hot oil. Cook, stirring occasionally, for about 3-5 minutes, until the onions soften and become translucent. This step builds the foundational flavor of your soup. Next, add the diced carrots and continue to sauté for another 2 minutes, allowing them to slightly soften and release their sweet earthy notes.

Onions and carrots in pot, with ground meat being added to the pot

Step 2: Brown the Meat. If you’re including meat, add one pound of bulk mild Italian sausage (or your chosen ground meat) to the pot with the onions and carrots. Use a wooden spoon or spatula to break up the sausage into smaller pieces as it cooks. Continue to sauté for 5-7 minutes, stirring frequently, until most of the pink color is gone. It doesn’t need to be fully cooked through at this stage, just browned sufficiently to build flavor. If using a leaner meat, ensure it’s cooked until no longer pink.

Spices being added to the Instant Pot, followed by garlic

Step 3: Season and Deglaze. Turn off the “Sauté” function. Now, it’s time to infuse the soup with aromatic spices. Add ¼ teaspoon red pepper flakes (or more if you prefer a spicier kick), ½ teaspoon kosher salt, ½ teaspoon black pepper, ¾ teaspoon dried oregano, ½ teaspoon dried basil, and ½ teaspoon dried thyme leaves (ensure they are leaves, not ground thyme). Stir these seasonings thoroughly into the meat and vegetable mixture, allowing their fragrances to bloom for about 30 seconds. Next, add 4 cloves of pressed or minced garlic, stirring it in and cooking for just one minute until fragrant. Be careful not to burn the garlic. If there are any browned bits stuck to the bottom of the pot, pour in a splash of chicken broth and scrape them up using a wooden spoon. This crucial step, known as deglazing, prevents a “Burn” notice and adds an extra layer of flavor to your soup.

Broth being added to the Instant Pot, followed by diced tomatoes

Step 4: Pressure Cook the Base. Pour in 3 cups of low-sodium chicken broth, followed by one 15-ounce can of diced tomatoes, including their juice. Give everything a good stir to combine. Secure the Instant Pot lid, making sure the steam release knob is set to the “Sealing” position. Select the “Pressure Cook” or “Manual” setting and set the cooking time to just **1 minute** on High Pressure. It will take several minutes for the Instant Pot to build pressure before the actual cooking time begins. Once the cooking cycle is complete, turn off the Instant Pot and allow for a **5-minute Natural Release**. This means you let the pot sit undisturbed for 5 minutes, allowing the pressure to naturally decrease. After 5 minutes, carefully turn the steam release knob to the “Venting” position to quick-release any remaining steam. Wait until the floating pin drops down completely before attempting to open the lid.

Adding tortellini to soup, steam vent open on pot

Step 5: Cook the Tortellini. Carefully open the lid. The broth will be hot and fragrant. Add 10 ounces of refrigerated cheese tortellini (or cheese and spinach tortellini) to the soup. Gently stir to ensure all the tortellini are fully submerged in the hot liquid. Place the lid back on the Instant Pot, but this time, **leave the steam vent open** to prevent pressure from building again. Let the soup sit, covered, for approximately 10 minutes. The residual heat of the soup is sufficient to perfectly cook the refrigerated tortellini, leaving them tender and plump. This method prevents overcooking and ensures the pasta maintains its delightful texture.

Adding spinach to soup, followed by cream being added to soup

Step 6: Finish with Freshness and Creaminess. Remove the lid once more. Add two generous handfuls of fresh baby spinach to the pot. Stir gently until the spinach wilts into the hot soup, which typically takes only a minute or two. The vibrant green adds a beautiful color and a fresh, healthy component. Finally, pour in ½ cup of heavy cream. Stir well to incorporate the cream evenly throughout the soup, transforming the broth into a wonderfully rich and creamy consistency. Taste and adjust seasonings if needed. Serve hot, garnished as desired.

Handling Frozen Tortellini in Your Instant Pot Soup

Yes, you can certainly use frozen tortellini in this recipe, but it requires a slight adjustment to the cooking method to ensure it’s cooked through perfectly without diluting the soup. The primary goal is to thaw and cook the pasta without turning it mushy. Your best bet is to thaw the tortellini beforehand if possible. If you’re adding it directly from frozen, add it to the hot soup after the pressure cooking step (Step 5) as directed, but instead of just resting, turn the Instant Pot back on to the “Sauté” setting (on low or normal). Cook the soup, uncovered, for an additional 2-3 minutes, stirring occasionally, until the frozen tortellini is tender. This gentle simmering helps it cook evenly. Be careful not to boil vigorously, which can cause the tortellini to break apart. Once tender, proceed with adding the spinach and cream as in Step 6.

Alternative Greens: What Can Replace Spinach?

While baby spinach adds a lovely freshness and vibrant color to this soup, you have several excellent options if you prefer to substitute it or simply want to try something different. Kale is a fantastic alternative that holds up well in soups, offering a slightly more robust texture and earthy flavor. If using kale, remember to remove the tough, fibrous ribs from the leaves before tearing the leaves into bite-sized pieces. Add kale at the same stage as you would spinach, stirring until it wilts and softens. Other leafy greens that could work include Swiss chard (also de-ribbed and chopped) or even a handful of chopped collard greens for a bolder, slightly bitter note. The key is to add them at the end so they retain some texture and nutrients.

Making It Dairy-Free: Non-Dairy Options for Creamy Tortellini Soup

Creating a delicious dairy-free version of this **Creamy Tortellini Soup** is absolutely achievable with a few clever substitutions. The goal is to replicate the rich, silky texture of heavy cream while maintaining the soup’s overall flavor profile. Here are several excellent options:

  • **Coconut Cream:** For a rich, thick, and subtly sweet option, full-fat coconut cream is a great choice. It adds a slight coconut flavor, which can be surprisingly complementary to the soup’s savory notes, especially with the Italian spices. Use the thick cream from the top of a can of full-fat coconut milk.
  • **Cashew Cream:** This is a popular and very effective dairy-free cream substitute. To make it, soak raw cashews in hot water for at least 30 minutes (or cold water for a few hours), then drain and blend them with a little fresh water until completely smooth and creamy. It offers a neutral flavor and a beautifully smooth texture.
  • **Blended Silken Tofu and Soy Milk:** Puree silken tofu with a splash of unsweetened soy milk until it reaches a creamy consistency. This option is high in protein and provides a very neutral base.
  • **Store-Bought Heavy Cream Alternatives:** Several brands now offer plant-based heavy cream substitutes designed for cooking and baking. Products like Silk® brand’s Heavy Whipping Cream Alternative or similar oat-based or pea-protein-based creams can work wonderfully and are often formulated to mimic the texture and performance of dairy cream. Always check the ingredients to ensure they align with your dietary needs and preferences.

When using non-dairy alternatives, remember that some might have a thinner consistency than traditional heavy cream, or their flavor might be more pronounced. You may need to adjust the amount to achieve your desired creaminess and taste. Always taste and adjust seasonings at the end.

Serving Suggestions & Storage Tips

This **Instant Pot Creamy Tortellini Soup** is a complete meal in itself, but it pairs beautifully with a few simple accompaniments. A crusty loaf of Italian bread or garlic bread is perfect for soaking up every last drop of the creamy broth. A light green salad with a vinaigrette dressing provides a refreshing contrast to the richness of the soup. Don’t forget a sprinkle of freshly grated Parmesan cheese and some minced fresh parsley as a garnish for an extra touch of flavor and visual appeal.

For leftovers, allow the soup to cool completely before transferring it to an airtight container. It will keep well in the refrigerator for up to 3-4 days. When reheating, gently warm it on the stovetop over medium-low heat or in the microwave. You might notice the soup thickens slightly upon cooling, or the tortellini might soak up more broth. If desired, you can add a splash of chicken or vegetable broth, or a touch more cream, to reach your preferred consistency when reheating. Freezing this soup is not recommended, as pasta can become mushy, and creamy bases can sometimes separate when thawed.

  • 10 ounces Refrigerated Cheese Tortellini** (or cheese & spinach)
  • 2 handfuls Fresh Baby Spinach (Kale can also be used)
  • ½ cup Heavy Cream

Garnish

  • Minced Parsley
  • Parmesan Cheese

Instructions

  1. Turn on the Sauté setting. When hot, add the oil and onion. Cook, stirring occasionally, until just turning translucent.
  2. Add the carrots and cook for a minute.
  3. Add the sausage, breaking it up as it cooks. Cook until most of the pink is gone (it doesn’t need to be fully cooked).
  4. Add the red pepper flakes, salt, pepper, oregano, basil, and thyme leaves. Stir well.
  5. Then add the garlic and cook for 1 minute, stirring to incorporate.
  6. Pour in the chicken broth and the diced tomatoes. Stir.
  7. Close the lid and set the steam release knob to the Sealing position.
  8. Press the Pressure Cook/Manual button or dial, then the +/- button or dial to select 1 minute. High Pressure. The pot will take several minutes to come to pressure.
  9. When the cook cycle has finished, turn off the pot and let it sit undisturbed for 5 minutes (5 minute natural release). Then turn the steam release knob to the Venting position to release the remaining steam/pressure.
  10. When the pin in the lid drops back down, open the lid.
  11. Add the tortellini and stir. Make sure all of them are submerged. Then place the lid back on, but leave the steam vent open so it doesn’t build pressure. Let rest for about 10 minutes. The tortellini will cook in the residual heat of the soup.
  12. Open the lid and add the baby spinach and stir well.
  13. Pour in the heavy cream and stir.
  14. Garnish as desired and serve hot.

Notes

*To make Vegetarian, omit the sausage and use vegetable broth in place of the chicken broth.

**If you have frozen tortellini, either thaw it before adding, or add it as directed and turn on the sauté setting and cook for a couple of minutes, uncovered. Then add the spinach and cream.

If you use dried tortellini, it needs a longer cook time. Add it to the pot after adding the diced tomatoes, and add 1/2 cup of water as the dry pasta will soak up some of the liquid. Then pressure cook as directed.
