Crafting the Perfect Base: The Sugar Cookie Crust

What is the crust made out of?

At the heart of every great fruit pizza is an equally great crust. For this recipe, we use a giant sugar cookie as our base! It’s wonderfully simple, yet incredibly effective. This crust is slightly sweet, offering a lovely contrast to the creamy topping and fresh fruit. It bakes up with a delightful chewy texture and is incredibly easy to make. Plus, its sturdy yet yielding nature makes it a breeze to slice and serve, ensuring every piece holds together perfectly. You can opt for store-bought refrigerated sugar cookie dough for ultimate convenience, or whip up your favorite homemade recipe if you have a little extra time. Either way, you’re guaranteed a fantastic foundation for your fruit masterpiece.

The Dreamy Cream Cheese Frosting

Can I use store-bought frosting?

The frosting is the luscious layer that brings everything together, providing a creamy canvas for your fruit art. While you certainly can use store-bought frosting for convenience, we highly recommend making our homemade cream cheese frosting. Our recipe for the frosting is designed to be much lighter and less dense than typical store-bought varieties. The addition of whipped topping (like Cool Whip) creates an airy, creamy texture that perfectly complements the sweetness of the cookie and the tartness of the fruit. Store-bought options, while quicker, tend to be significantly sweeter and heavier, which can overpower the delicate flavors of the fruit. However, don’t let that stop you – if a ready-made option is all you have, feel free to use it! The key is to have a delicious, spreadable layer that binds your dessert components harmoniously.

Selecting the Best Fruits for Your Masterpiece

What are the best fruits for decorating this?

The beauty of Fresh Fruit Pizza lies in its versatility, especially when it comes to fruit selection. The key to a successful fruit pizza is choosing fruits and berries that won’t release excessive water, which could make your crust soggy. Think vibrant colors, varying textures, and seasonal availability to make your pizza truly shine.

  • Berries are always a winner: Strawberries (sliced), blueberries, raspberries, and blackberries are excellent choices. They are firm, flavorful, and add stunning color.
  • Tropical touches: Sliced kiwi fruit offers a beautiful green hue and a tangy contrast. Mandarin oranges (well-drained from a can or fresh segments) add a pop of orange. Pineapple chunks can also work well, just be sure they are thoroughly drained.
  • Other great options: Grapes (halved), mangoes (diced), and even thinly sliced peaches (if very fresh and firm) can be wonderful additions.
  • Fruits to avoid: Watermelon, while delicious, is too watery and will quickly make your crust soggy. We also don’t recommend bananas or apples, as they brown very quickly after being exposed to the air, diminishing the visual appeal of your freshly made pizza.

Have fun playing with the design and colors of your fruit pizza! This is where your creativity can truly shine. You don’t have to be an artist to make this dessert look absolutely stunning. Simply start arranging the fruit in concentric circles, in rows, or a free-form pattern, and see what happens. The natural beauty of the fruit will do most of the work for you. It doesn’t have to be perfect – often, the most charming designs are those that are a little whimsical. You might be surprised at the gorgeous work of art you end up creating!

Tips for Fruit Pizza Success

To ensure your Fresh Fruit Pizza turns out perfectly every time, keep these simple tips in mind:

  • Cool the Crust Completely: This is crucial! Applying frosting to a warm crust will cause it to melt and become a runny mess. Allow the sugar cookie to cool entirely before adding any toppings.
  • Room Temperature Ingredients for Frosting: For the smoothest, creamiest frosting, make sure your cream cheese and butter are at room temperature. This allows them to blend easily without lumps.
  • Drain Fruits Thoroughly: Any excess moisture from fruits like mandarin oranges or pineapple can lead to a soggy crust. Pat them dry with paper towels if needed.
  • Arrange Fruit Just Before Serving: While the crust and frosting can be prepared in advance, arranging the fresh fruit is best done within an hour or two of serving. This keeps the fruit looking its best and prevents any potential sogginess.
  • Chill Before Serving: A short chill in the refrigerator (about 30 minutes) after assembling helps the frosting set slightly and ensures the pizza is refreshingly cool.

Variations to Inspire Your Creativity

While the classic Fresh Fruit Pizza is undeniably delicious, feel free to experiment with different variations:

  • Crust Alternatives: Instead of sugar cookie dough, consider a graham cracker crust for a slightly different texture and flavor, or even a shortbread crust for a buttery base.
  • Frosting Flavors: Add a hint of lemon zest to your cream cheese frosting for a brighter, zingier taste, or a touch of almond extract for a nutty undertone. A drizzle of chocolate ganache over the frosting before adding fruit can also be delightful.
  • Theme Your Fruit: Create a patriotic pizza with strawberries, blueberries, and raspberries for national holidays. Or go tropical with mango, pineapple, and kiwi.
  • Mini Fruit Pizzas: Instead of one large pizza, bake individual sugar cookies for mini fruit pizzas. These are perfect for parties and allow guests to customize their toppings!

Serving and Storage Suggestions

Fresh Fruit Pizza is best enjoyed on the day it’s made, especially when the fruit is at its peak freshness. To serve, simply slice it like a traditional pizza using a sharp knife. For the best presentation, use a cake server or a wide spatula to transfer slices to plates.

If you have leftovers, store them in an airtight container in the refrigerator for up to 1-2 days. Be aware that some fruits may start to release moisture over time, and the cookie crust may soften slightly. For optimal freshness, consider preparing the crust and frosting ahead of time and assembling the fruit pizza closer to when you plan to serve it.

Ingredients

For the Pizza:

  • 1 (16.5 oz) tube Refrigerated Sugar Cookie Dough
  • 1 lb Strawberries, sliced
  • 2 Kiwi Fruit, sliced and peeled
  • 1 cup Blueberries
  • 1 (11 oz) can Mandarin Oranges, drained
  • 1 pint Raspberries

For the Frosting:

  • 8 oz Cream Cheese, room temperature
  • 2 Tbsp Unsalted Butter, room temperature
  • ½ – 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • ½ (8 oz) tub Whipped Topping (such as Cool-Whip®)

Instructions

  1. Heat oven to 350° F (175° C).
  2. On a parchment-lined baking sheet or a 14-inch pizza pan, roll or press the cookie dough with your hands to form a circle about 12 to 14 inches in diameter and about 1/8 inch thick.
  3. Bake for 10 to 14 minutes, or until the edges are just turning light golden in color. The center will still be soft when you take it out of the oven.
  4. Let the cookie cool completely on the baking sheet before transferring.
  5. Meanwhile, in a mixing bowl, beat the cream cheese and butter together until smooth and creamy.
  6. Add the vanilla extract and ¼ cup of the powdered sugar. Beat on low speed until fully incorporated. Add another ¼ cup of sugar and mix in. Taste, and add more powdered sugar if you prefer a sweeter frosting (up to 1 cup total).
  7. Gently fold in the whipped topping until it is fully mixed and no streaks remain. Place the frosting in the refrigerator to chill and become a little firmer, about 15-20 minutes.
  8. While the cookie cools and the frosting chills, slice the strawberries and peel and slice the kiwi fruit. Ensure all fruit is prepared and ready.
  9. When the cookie is completely cooled, carefully transfer it to the serving dish or pizza board you will be using. Ensure the dish is stable and can withstand cutting.
  10. Spread the chilled frosting evenly over the entire cookie crust, extending to the edges. Use all of the frosting.
  11. Arrange the prepared fruit in any pattern you like. A common method is to start from the outside and work your way towards the center, creating rings of different fruits. Be creative and have fun with your design!
  12. To serve, cut the fruit pizza into wedges, just as you would a traditional pizza! Enjoy immediately for best freshness.

Notes

Use any fruit you like! Some other delicious ideas include pineapple chunks, halved grapes, diced mangos, and fresh blackberries. Feel free to customize based on seasonal availability and personal preference.
