  • 3 cups chicken stock
  • 2 small or 1 large zucchini diced
  • 6 oz gluten-free lasagna noodles a little more than half the package – just eyeball it
  • 1 cup mozzarella cheese grated
  • 1 cup spinach chopped

For the Cheese Mixture:

  • 1 cup ricotta cheese
  • 1/4 cup parmesan cheese
  • 1/4 teaspoon salt

Instructions

  • Press the SAUTE button on your Instant Pot and allow it to preheat for 1-2 minutes until “Hot” appears on the display. Add the olive oil, diced onion, and diced carrot to the pot. Sauté for 3-4 minutes, stirring occasionally, until the vegetables begin to soften and become fragrant.
