Garlic Parmesan Potatoes with Basil Leaves

Serves 4 in about 25 minutes. Paprika goes in first, and onion powder finishes the pot.

  • 2-3 tablespoons olive oil
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper
  • 1 ½ teaspoons garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika (optionally, use smoked for extra flavor)
  • ½ teaspoon dried basil leaves (or italian seasoning)
  • ½ cup grated parmesan, divided
  • 2 tablespoons chopped parsley (for garnish)

Method

  1. Rinse the potatoes and pat dry with a paper towel. Be sure to dry thoroughly. keep it nearby.
  2. Stir the olive oil and the seasonings in a bowl.
  3. Tip in ¼ cup of the parmesan and mix in.
  4. Stir in the potatoes to the bowl and stir the potatoes to coat them with the mixture.
  5. Tip in to the air fryer basket, spreading out so they don't touch. That way they will get crisp and not steamed.
  6. Set the temperature to 400° F and cook for 15 minutes, tossing/stirring the potatoes halfway through the cook time.
  7. Test the potatoes with a toothpick or small knife to see if they are tender enough for you. If not, just close the lid and cook for a few more minutes.
  8. Lift out to a serving dish and sprinkle the hot potatoes with the remaining parmesan and some chopped parsley.
