Serves 4 in about 35 minutes. A stove recipe built around mayonaise and cheddar cheese.
Ingredients
- ¾ cup sour cream
- ¼ cup mayonaise
- 1 clove garlic
- 1 or 2 handfuls fresh cilantro leaves
- 2 tsp lime juice, fresh
- Pinch kosher salt
- Pinch pepper
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 pound lean ground turkey
- 1 clove garlic, finely minced
- 1 tsp cumin powder
- 2 tbsp chili powder
- 1 tsp kosher salt
- ½ tsp pepper
- 3 tbsp tomato paste
- 1 pkg small flour taco shells, street taco size
- 1 cup cheddar cheese, grated
- 2 roma tomatoes, diced
Method
- Tip in all ingredients to a mini food processor (or use a full sized one if that's what you have) and blend very well. Taste and adjust amount of cilantro and/or salt to your liking.
- Warm a skillet to med high and add the olive oil. When it starts to shimmer, add the diced onion. Mix occasionally, until softened.
- Tip in the ground turkey, breaking it up as you cook it.
- Stir in the garlic, cumin, chili powder, salt, and pepper. Mix well.
- Simmer until the meat is cooked all the way, and add the tomato paste. Simmer it just a couple minutes longer to heat the tomato paste through.
- Assemble your tacos with the cheese, then meat, diced tomatoes, and drizzle on some of the Cilantro Cream Sauce. Enjoy!
